This One Pot Veggie Mac and Cheese is a creamy, comforting dish that combines elbow macaroni, mixed vegetables, and melted cheese, all cooked in one pot. Quick to prepare, it’s a wholesome and nutritious meal perfect for busy weeknights and family dinners.

Ingredients

  • 2 cups elbow macaroni (or pasta of your choice)
  • 4 cups vegetable broth or water
  • 1 cup mixed vegetables (broccoli, bell peppers, spinach)
  • 2 cups shredded cheddar cheese (or vegan cheese)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional spices: paprika or Italian seasoning

Instructions

  • Sauté the Vegetables: Heat olive oil in a large pot over medium heat. Add the mixed vegetables and sauté for 3–4 minutes until softened.
  • Cook Pasta: Stir in pasta and pour in vegetable broth or water. Bring to a boil, then reduce heat and simmer for 8–10 minutes, stirring occasionally, until pasta is al dente and most of the liquid is absorbed.
  • Add Cheese: Remove from heat, stir in shredded cheese until melted and creamy. For a thicker consistency, add milk or more cheese.
  • Season: Add salt, pepper, and optional spices to taste. Mix well.
  • Serve: Divide into bowls and enjoy!
