Ingredients

  • 1 cup of fresh orange juice
  • 1 1/2 cups of all-purpose flour
  • 1 1/2 tsp of baking powder
  • 1/2 tsp of baking soda
  • 1/4 tsp of salt
  • 1/2 cup of butter, softened
  • 1 cup of granulated sugar
  • 2 large eggs
  • 1 tsp of vanilla extract
  • Zest of one orange (optional)
  • Powdered sugar for dusting (optional)

Instructions

  • Preheat the oven to 350°F (175°C) and grease a 9×9-inch cake pan or line with parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a separate large bowl, cream the butter and sugar together until light and fluffy, about 3-4 minutes.
  • Add eggs one at a time, mixing well after each addition, followed by the vanilla extract and orange zest.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the orange juice. Begin and end with the dry ingredients.
  • Mix until just combined, being careful not to overmix.
  • Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  • Dust with powdered sugar before serving, if desired.
