This creamy and rich original Cheesecake Factory-style cheesecake features a classic graham cracker crust and a smooth vanilla cream cheese filling, perfect for any special occasion or indulgent dessert.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar (for crust)
  • 1/2 cup unsalted butter, melted
  • 2 1/2 pounds cream cheese, room temperature
  • 1 1/4 cups granulated sugar
  • 1/2 cup sour cream
  • 1/4 cup all-purpose flour
  • 1 tablespoon vanilla extract
  • 5 large eggs, room temperature
  • 2 large egg yolks
  • 1/4 cup heavy cream

Instructions

  1. Preheat the oven to 475°F (245°C). Lightly grease a 9- or 10-inch springform pan and wrap the bottom in aluminum foil to prevent leakage.
  2. In a bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Mix until well combined.
  3. Press the mixture into the bottom of the prepared pan and slightly up the sides. Refrigerate the crust while preparing the filling.
  4. In a large bowl, beat the cream cheese until smooth and fluffy, about 2 minutes.
  5. Add 1 1/4 cups sugar and beat until fully incorporated. Add sour cream, flour, and vanilla extract. Mix well.
  6. Add eggs and egg yolks one at a time, mixing on low speed until just incorporated. Scrape down the bowl as needed.
  7. Stir in the heavy cream until just combined.
  8. Pour the batter over the chilled crust and smooth the top with a spatula.
  9. Bake at 475°F (245°C) for 12 minutes. Without opening the oven, reduce the temperature to 350°F (175°C) and bake for 50 to 60 minutes, or until the center is almost set.
  10. Turn off the oven, slightly crack the door open, and let the cheesecake cool inside for 1 hour.
  11. Remove from the oven and refrigerate for at least 4 hours or overnight before serving.
