2 pounds chicken breast (boneless and skinless)
1 tablespoon olive oil
1 tablespoon light brown sugar
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon ground paprika
1 teaspoon Italian seasoning
1 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon butter (diced)
Instructions
Preheat the oven to 400°F and lightly grease a 9×13 inch casserole dish.
Place chicken between two pieces of plastic wrap. Using a rolling pin or the flat side of a mallet, pound chicken to about 0.5-0.75 inch thickness. Rub olive oil all over the chicken breasts.
In a small bowl, combine all the remaining ingredients (except butter). Sprinkle the mixture over the chicken and lightly rub it in.
Place the seasoned chicken in the prepared casserole dish. Top each breast with a slice of butter.
Bake at 400°F for 18-20 minutes, or until the internal temperature reaches 165°F. Finish under the broiler for 1-3 minutes to achieve a nicely browned finish. Serve immediately.
