These crispy feta rolls wrapped in phyllo pastry and drizzled with a sweet-spicy chili honey sauce make for an impressive and delectable appetizer or snack.

Ingredients

For the Feta Rolls:

  • 8 ounces feta cheese, crumbled
  • 2 tablespoons fresh dill, chopped
  • 1 clove garlic, grated
  • 1620 sheets frozen phyllo dough, thawed
  • 1 tablespoon extra-virgin olive oil, plus more for brushing
  • 1 tablespoon salted butter
  • 12 teaspoons chili flakes (adjust to your desired spice level)
  • ½ teaspoon cumin seeds
  • ⅓ cup honey

Instructions

1. Preheat the Oven:

  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

2. Prepare the Filling:

  • In a bowl, combine the crumbled feta, chopped dill, and grated garlic.

3. Assemble the Rolls:

  • Lay one sheet of phyllo dough on a clean surface and fold it in half lengthwise.
  • Lightly brush the edges of the folded phyllo with olive oil.
  • Place a rounded tablespoon of the feta mixture near one end of the phyllo.
  • Roll the phyllo over the filling, folding in the sides as you go to seal it, burrito-style.
  • Place each roll seam-side down on the prepared baking sheet.
  • Repeat with the remaining phyllo sheets and filling to make 12-16 rolls.

4. Bake the Rolls:

  • Brush the tops of the assembled rolls with olive oil.
  • Bake for 20 minutes or until the rolls are golden brown and crispy.

5. Prepare the Chili Honey Sauce:

  • In a small skillet, melt the butter with the olive oil over medium heat.
  • Add the chili flakes and cumin seeds; cook until fragrant, about 1-2 minutes.
  • Remove from heat and stir in the honey until well combined.

6. Serve:

  • Serve the rolls warm, drizzled with the chili honey sauce, or with the sauce on the side for dipping.

Notes

  • Phyllo Dough Handling: Keep the phyllo sheets covered with a damp towel while assembling to prevent them from drying out and cracking.
  • Chili Honey Adjustments: Adjust the amount of chili flakes to suit your desired spice level. For a milder version, reduce the chili flakes; for extra heat, increase them.
  • Storage: Store any leftover rolls in an airtight container in the refrigerator for up to 2 days. Reheat in the oven at 350°F (175°C) for about 5-7 minutes to restore crispiness.
