Ingredients
For the Feta Rolls:
8 ounces feta cheese, crumbled
2 tablespoons fresh dill, chopped
1 clove garlic, grated
16–20 sheets frozen phyllo dough, thawed
1 tablespoon extra-virgin olive oil, plus more for brushing
1 tablespoon salted butter
1–2 teaspoons chili flakes (adjust to your desired spice level)
½ teaspoon cumin seeds
⅓ cup honey
Instructions
1. Preheat the Oven:
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
2. Prepare the Filling:
In a bowl, combine the crumbled feta, chopped dill, and grated garlic.
3. Assemble the Rolls:
Lay one sheet of phyllo dough on a clean surface and fold it in half lengthwise.
Lightly brush the edges of the folded phyllo with olive oil.
Place a rounded tablespoon of the feta mixture near one end of the phyllo.
Roll the phyllo over the filling, folding in the sides as you go to seal it, burrito-style.
Place each roll seam-side down on the prepared baking sheet.
Repeat with the remaining phyllo sheets and filling to make 12-16 rolls.
4. Bake the Rolls:
Brush the tops of the assembled rolls with olive oil.
Bake for 20 minutes or until the rolls are golden brown and crispy.
5. Prepare the Chili Honey Sauce:
In a small skillet, melt the butter with the olive oil over medium heat.
Add the chili flakes and cumin seeds; cook until fragrant, about 1-2 minutes.
Remove from heat and stir in the honey until well combined.
6. Serve:
Serve the rolls warm, drizzled with the chili honey sauce, or with the sauce on the side for dipping.

Phyllo Dough Handling: Keep the phyllo sheets covered with a damp towel while assembling to prevent them from drying out and cracking.
Chili Honey Adjustments: Adjust the amount of chili flakes to suit your desired spice level. For a milder version, reduce the chili flakes; for extra heat, increase them.
