This Overnight Baked Banana French Toast Casserole is an easy and delicious breakfast perfect for banana lovers. Made with sourdough bread, bananas, and a creamy custard, it’s baked to perfection with a sweet streusel topping.

Ingredients

  • 1 loaf sourdough bread, cut into cubes
  • 6 large eggs
  • 2 cups milk
  • 1 cup heavy whipping cream
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tbsp vanilla extract
  • 1 tsp ground cinnamon
  • 3 ripe bananas, sliced
  • Streusel topping (optional)

Instructions

  • Cube the sourdough bread and place it in a large bowl.
  • In another bowl, whisk together eggs, milk, cream, sugars, vanilla, and cinnamon.
  • Pour the egg mixture over the bread and stir in sliced bananas.
  • Transfer the mixture to a greased casserole dish and refrigerate overnight.
  • The next morning, bake at 350°F for 35-40 minutes. Add streusel on top for the last 5 minutes of baking.

Notes

  • You can prepare the streusel and refrigerate it overnight to make the morning easier.
  • If you like your casserole firmer, reduce the baking time slightly.
