These Parmesan Artichoke Hearts are a deliciously savory appetizer or side dish, featuring tender artichoke hearts coated in a crispy, cheesy Parmesan crust. Ingredients

  • 1 can (14 oz) artichoke hearts, drained and halved (or 1 jar of marinated artichokes, drained)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 1/4 cup freshly chopped parsley
  • 2 cloves garlic, minced
  • Zest of 1 lemon
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried oregano (optional)
  • 1 tbsp fresh lemon juice (optional, for garnish)

Instructions

  • Preheat the oven:
  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
  • Prepare the artichokes:
  • If using canned or jarred artichoke hearts, drain them well and pat them dry with paper towels to remove excess moisture. Halve them if they are whole.
  • Make the Parmesan coating:
  • In a small bowl, mix together the grated Parmesan cheese, panko breadcrumbs, chopped parsley, garlic, lemon zest, salt, pepper, and dried oregano (if using).
  • Coat the artichokes:
  • Brush each artichoke heart with a little olive oil, then dip each half into the Parmesan breadcrumb mixture, pressing gently to ensure an even coating.
  • Bake:
  • Place the coated artichoke hearts on the prepared baking sheet, cut-side up.
  • Drizzle with a little more olive oil and bake for 15-20 minutes, or until golden brown and crispy on top.
  • Serve:
  • Once baked, remove the artichokes from the oven and drizzle with fresh lemon juice, if desired. Serve hot and enjoy as a savory appetizer or side dish!
