This hearty Pasta Fagioli Soup combines tender pasta, creamy beans, savory Italian turkey sausage, and fresh spinach in a rich, flavorful broth. It’s a comforting, one-pot meal perfect for chilly nights or cozy family dinners.

Ingredients

  • 1 lb turkey sausage (or sweet Italian sausage)
  • 1 medium onion, chopped
  • 1 tbsp canola oil (or olive oil)
  • 2 garlic cloves, minced
  • 1 can (15 oz) great northern beans (or cannellini/navy beans)
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (14.5 oz) chicken broth
  • 1 cup water (or extra broth)
  • 1/2 cup elbow macaroni (or ditalini)
  • 1/4 tsp black pepper
  • 1 cup fresh spinach
  • Grated Parmesan cheese (for garnish)

Instructions

  • Cook Sausage: In a large saucepan, cook sausage over medium heat until browned. Drain and set aside.
  • Sauté Aromatics: In the same pan, cook onion in oil until soft. Add garlic; sauté for 1 minute.
  • Make Soup Base: Add beans, tomatoes, broth, water, macaroni, and pepper. Bring to a boil.
  • Simmer: Cook uncovered 8–10 minutes until pasta is tender.
  • Finish & Serve: Stir in cooked sausage and spinach. Simmer until spinach wilts, 2–3 minutes. Top with Parmesan cheese.

Notes

  • Add herbs like basil, oregano, or rosemary for extra flavor.
  • For spicy kick, use hot Italian sausage or add red pepper flakes.
  • To store, keep pasta separate to prevent sogginess. Soup keeps 4 days in fridge or 3 months in freezer (without pasta).
