Celebrate the red, white, and blue with this easy Patriotic Poke Cake, perfect for any patriotic holiday like the 4th of July or Memorial Day. With a moist vanilla cake base, vibrant strawberry and blueberry jello, and topped with a fluffy whipped cream frosting, this festive cake is sure to be a crowd favorite!

Ingredients

  • 1 box (15.25 oz) white cake mix (plus ingredients on the box)
  • 1 package (3 oz) strawberry-flavored Jello
  • 1 package (3 oz) blueberry-flavored Jello
  • 2 cups boiling water
  • 1 tub (8 oz) Cool Whip (or homemade whipped cream)
  • Fresh strawberries and blueberries for garnish (optional)

Instructions

  1. Bake the Cake: Prepare the white cake mix according to the instructions on the box. Bake in a 9×13-inch pan and allow it to cool completely.
  2. Poke the Cake: Once the cake has cooled, use the handle of a wooden spoon or a similar tool to poke holes all over the top of the cake.
  3. Prepare the Jello: In two separate bowls, dissolve the strawberry-flavored Jello in 1 cup of boiling water and the blueberry-flavored Jello in the other cup of boiling water. Stir each until completely dissolved.
  4. Add the Jello to the Cake: Slowly pour the strawberry Jello into the holes on one side of the cake and the blueberry Jello into the other side. Let the cake sit for about 30 minutes, so the Jello sets into the cake.
  5. Top with Whipped Cream: Spread the Cool Whip evenly over the top of the cake. If desired, garnish with fresh strawberries and blueberries for extra patriotism.
  6. Chill and Serve: Refrigerate the cake for at least 2 hours before serving to allow the flavors to meld and the cake to set properly.

Notes

  • For an extra colorful effect, you can alternate the jello flavors and even add layers of whipped cream between the jello for a more festive look.
  • You can use homemade whipped cream if you prefer a lighter, less sweet topping.
