1 baguette, sliced into 1/2-inch pieces
1 tablespoon olive oil
1 cup whole milk ricotta cheese
2–3 ripe peaches, sliced
2 teaspoons honey (plus more for drizzling)
Fresh basil leaves, for garnish

Instructions
Preheat oven to 400°F (200°C).
Arrange baguette slices on a baking sheet and brush with olive oil.
Toast in the oven for 8–10 minutes, or until golden brown. Let cool.
In a medium bowl, whip the ricotta with 2 teaspoons of honey until light and creamy.
