Ingredients

  • 1 baguette, sliced into 1/2-inch pieces
  • 1 tablespoon olive oil
  • 1 cup whole milk ricotta cheese
  • 23 ripe peaches, sliced
  • 2 teaspoons honey (plus more for drizzling)
  • Fresh basil leaves, for garnish
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Arrange baguette slices on a baking sheet and brush with olive oil.
  3. Toast in the oven for 8–10 minutes, or until golden brown. Let cool.
  4. In a medium bowl, whip the ricotta with 2 teaspoons of honey until light and creamy.
  5. Spread whipped ricotta onto each toasted baguette slice.
  6. Top with peach slices and a drizzle of honey.
  7. Season with salt and black pepper to taste.
  8. Garnish with fresh basil leaves and serve immediately.
