Ingredients

  • 4 cups fresh peaches, peeled and sliced
  • 1 cup granulated sugar (divided)
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon cornstarch
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar (for the crust topping)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small cubes
  • 1/2 cup milk
  • 1/2 teaspoon vanilla extract (for the crust)
  • 1 tablespoon coarse sugar (for sprinkling)

Instructions

  • Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  • In a large bowl, toss the sliced peaches with 1 cup sugar, lemon juice, vanilla extract, cinnamon, and cornstarch. Stir until the peaches are well coated and set aside.
  • In another bowl, whisk together the flour, 1/4 cup sugar, baking powder, and salt.
  • Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  • Stir in the milk and vanilla extract until the dough comes together.
  • Spoon the peach mixture into the prepared baking dish.
  • Drop spoonfuls of the dough mixture over the peaches, leaving some gaps for the filling to peek through.
  • Sprinkle the dough with coarse sugar for an extra crunchy top.
  • Bake for 40-45 minutes, or until the cobbler is golden brown and the peach filling is bubbling.
  • Let it cool for 10 minutes before serving.

Notes

  • For extra flavor, add a pinch of nutmeg to the peach filling.
  • Serve with a scoop of vanilla ice cream or a dollop of whipped cream for an indulgent treat.
  • If fresh peaches are out of season, frozen peaches can be used, though you may need to drain them to avoid excess moisture.
