Ingredients

  • For the Crust:
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder

  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg
  • For the Peach Filling:
  • 4 cups fresh peaches, peeled and sliced
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • For the Streusel Topping:
  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 teaspoon cinnamon
  • 1/4 cup unsalted butter, cold and cubed

Instructions

  1. Prepare the crust: Preheat the oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper. In a medium bowl, combine the flour, sugar, baking powder, and salt. Add the cold butter and mix until the mixture resembles coarse crumbs. Add the egg and mix until combined. Press the dough evenly into the prepared pan, creating a smooth base. Bake for 10 minutes or until slightly golden.
  2. Make the peach filling: While the crust bakes, prepare the peach filling. In a medium saucepan, combine the sliced peaches, sugar, cornstarch, lemon juice, cinnamon, and salt. Cook over medium heat, stirring constantly, until the mixture thickens and the peaches are tender, about 5-7 minutes. Remove from heat and set aside.
  3. Prepare the streusel topping: In a small bowl, combine the flour, brown sugar, and cinnamon. Add the cold butter and mix until the mixture resembles coarse crumbs.
  4. Assemble the bars: Once the crust has baked, remove it from the oven. Pour the peach filling evenly over the crust. Sprinkle the streusel topping over the peach filling.
  5. Bake the bars: Return the pan to the oven and bake for an additional 30-35 minutes, or until the top is golden brown and the filling is bubbling.
  6. Cool and slice: Allow the bars to cool completely in the pan before cutting into squares.

Notes

  • For an added twist, you can sprinkle a little powdered sugar on top of the bars after they’ve cooled.
  • You can substitute frozen peaches if fresh ones are unavailable—just thaw and drain them before use.
