Creamy peanut butter and jelly overnight oats made with quick oats, maple syrup, and chia jam for a simple make-ahead breakfast. This no-cook recipe is perfect for busy mornings.

Ingredients

  • 1/2 cup quick oats
  • 1/2 cup non-dairy milk
  • 1 tablespoon maple syrup
  • 1/2 tablespoon peanut butter
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon peanut butter (for topping)
  • 1 tablespoon chia jam

Instructions

  1. In a jar or small bowl, mix together the quick oats, non-dairy milk, 1/2 tablespoon peanut butter, maple syrup, and vanilla extract until well combined.
  2. Cover the jar or bowl and refrigerate for at least 4 hours or overnight to allow the oats to soften and thicken.
  3. Before serving, spoon the remaining tablespoon of peanut butter on top and swirl in the chia jam. Serve and enjoy.

Notes

  • Use any non-dairy milk such as almond, soy, or oat milk.
  • If the oats are too thick in the morning, stir in a small splash of milk to loosen the texture.
  • Store covered in the refrigerator for up to 2 days.
  • Top with fresh berries or sliced bananas for extra flavor.
