Ingredients
1 tablespoon vegetable oil
1 pound medium-thick carrots (peeled, trimmed and sliced on the diagonal into ⅜-inch thick coins)
1/4 teaspoon salt (more or less to taste)
1/8 teaspoon ground ginger (optional)
1/16 teaspoon garlic powder (OR ground cinnamon to taste)
ground black pepper (to taste)
3 tablespoons butter
2 tablespoons brown sugar
2 tablespoons runny honey
2 tablespoons orange juice
chopped parsley (optional, to serve)
Instructions
Heat oil in a large cast iron skillet or other heavy skillet over medium heat. Add carrots, season with salt, garlic powder, ground ginger and black pepper.
Cook, stirring often, for about 15-20 minutes, or until carrots are starting to soften but still retain a bite.
Add butter, brown sugar and orange juice to skillet and cook over medium heat for 10-15 minutes, stirring often at first and constantly for final 5 minutes, until glaze forms around carrots. Glaze will thicken while simmering, but avoid letting it cook too vigorously to prevent burning.
Serve carrots immediately with chopped parsley, if desired.
Notes
Adjust the sweetness by increasing or decreasing the amount of brown sugar or honey.
For a spicier version, add a pinch of cayenne pepper or a little more ginger.
Leftovers can be stored in an airtight container in the fridge for up to 3 days.
These carrots pair well with roasted meats, poultry, or as a side dish at holiday meals.
