Perfect Glazed Carrots

Sweet and savory glazed carrots with a touch of honey, butter, and orange juice, perfect as a side dish.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 pound medium-thick carrots (peeled, trimmed and sliced on the diagonal into ⅜-inch thick coins)
  • 1/4 teaspoon salt (more or less to taste)
  • 1/8 teaspoon ground ginger (optional)
  • 1/16 teaspoon garlic powder (OR ground cinnamon to taste)
  • ground black pepper (to taste)
  • 3 tablespoons butter
  • 2 tablespoons brown sugar
  • 2 tablespoons runny honey
  • 2 tablespoons orange juice
  • chopped parsley (optional, to serve)

Instructions

  1. Heat oil in a large cast iron skillet or other heavy skillet over medium heat. Add carrots, season with salt, garlic powder, ground ginger and black pepper.
  2. Cook, stirring often, for about 15-20 minutes, or until carrots are starting to soften but still retain a bite.
  3. Add butter, brown sugar and orange juice to skillet and cook over medium heat for 10-15 minutes, stirring often at first and constantly for final 5 minutes, until glaze forms around carrots. Glaze will thicken while simmering, but avoid letting it cook too vigorously to prevent burning.
  4. Serve carrots immediately with chopped parsley, if desired.

Notes

  • Adjust the sweetness by increasing or decreasing the amount of brown sugar or honey.
  • For a spicier version, add a pinch of cayenne pepper or a little more ginger.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days.
  • These carrots pair well with roasted meats, poultry, or as a side dish at holiday meals.
