Ingredients

  • 1 cup sweetened shredded coconut (plus extra for rolling)
  • ½ cup crushed pineapple, drained
  • 1 cup graham cracker crumbs
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsweetened coconut milk (or any milk of choice)

Instructions

  • In a large bowl, combine the shredded coconut, crushed pineapple, graham cracker crumbs, powdered sugar, vanilla extract, and coconut milk.
  • Mix everything together until well combined. The mixture should be sticky enough to form into balls. If it’s too dry, add a little more milk.
  • Roll the mixture into small balls, about 1 inch in diameter.
  • Roll each ball in extra shredded coconut to coat it.
  • Place the coated balls on a baking sheet lined with parchment paper.
  • Refrigerate for at least 30 minutes to allow the balls to firm up.
  • Serve chilled and enjoy!

  • Storage: Store in an airtight container in the fridge to keep them fresh.
  • Customization: Add chopped nuts or a handful of chocolate chips to change up the flavor profile!
