Pineapple Cowboy Candy is a unique and flavorful treat that combines the sweetness of pineapple with a spicy kick. This tangy, syrupy snack is perfect for adding a bit of heat to your dishes or enjoying on its own as a zesty treat.

Ingredients

  • 1 fresh pineapple, peeled, cored, and cut into 1/4-inch slices (or use canned pineapple rings)
  • 1 ½ cups sugar
  • 1 cup white vinegar
  • 1 tbsp mustard seeds
  • 1 tbsp ground ginger
  • 1 tsp crushed red pepper flakes (adjust to your preferred heat level)
  • 1/2 tsp turmeric
  • 2 cloves garlic, minced (optional for extra flavor)
  • 1 tbsp cornstarch (optional, to thicken syrup)

Instructions

  • Prepare the Pineapple:
  • If using fresh pineapple, peel, core, and slice it into 1/4-inch rounds. Cut the rounds into smaller bite-sized pieces if desired. If using canned pineapple, drain the syrup and cut the slices into pieces.
  • Prepare the Syrup:
  • In a large saucepan, combine the sugar, white vinegar, mustard seeds, ginger, crushed red pepper flakes, turmeric, and minced garlic (if using). Stir to combine and bring the mixture to a simmer over medium heat.
  • Stir occasionally, making sure the sugar dissolves completely, and let it simmer for 5-10 minutes to allow the flavors to meld together. If you prefer a thicker syrup, whisk in 1 tablespoon of cornstarch mixed with a little water, and simmer for an additional 2 minutes until thickened.
  • Cook the Pineapple:
  • Add the pineapple pieces to the saucepan and stir to coat them evenly in the syrup. Reduce the heat to low and cook for an additional 10-15 minutes, until the pineapple softens slightly and absorbs the syrup’s flavors.
  • Cool and Store:
  • Remove from heat and let the pineapple cowboy candy cool in the syrup for about 10 minutes. Transfer the pineapple and syrup into clean jars (or airtight containers), making sure the pineapple is fully submerged in the syrup.
  • Allow the candy to sit at room temperature for at least 24 hours to let the flavors develop. For longer shelf life, store the jars in the refrigerator.
  • Serve and Enjoy:
  • Serve the pineapple cowboy candy as a topping for grilled meats, burgers, or even as a garnish for cocktails. It can also be enjoyed as a sweet, spicy snack on its own.

Notes
