A vibrant and flavorful pineapple rice dish made with fluffy rice, juicy pineapple chunks, colorful vegetables, and savory seasonings. This easy recipe delivers a perfect balance of sweet and savory flavors, making it a delicious side dish or light main course.

Ingredients

  • 3 cups cooked jasmine rice (cooled)
  • 1 1/2 cups fresh pineapple chunks
  • 1 tablespoon vegetable oil
  • 1/2 cup diced onion
  • 1/2 cup diced red bell pepper
  • 1/2 cup frozen peas and carrots
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon curry powder
  • 1/4 teaspoon black pepper
  • 2 green onions, sliced
  • 1/4 cup roasted cashews (optional)

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium heat.
  2. Add diced onion and garlic, sauté until fragrant and translucent.
  3. Stir in red bell pepper and peas and carrots; cook for 2–3 minutes until slightly tender.
  4. Add pineapple chunks and cook for another 2 minutes.
  5. Stir in the cooked rice, breaking up any clumps.
  6. Season with soy sauce, sesame oil, curry powder, and black pepper. Mix well to combine.
  7. Cook for 3–5 minutes, stirring frequently, until heated through.
  8. Garnish with sliced green onions and roasted cashews before serving.

Notes

  • Use day-old rice for best texture and to prevent mushiness.
  • Fresh pineapple provides the best flavor, but canned (drained) can be used.
  • Add tofu for extra protein if serving as a main dish.
  • Adjust soy sauce to taste for desired saltiness.
