Savor the rich, nutty flavor of Pistachio Sans Rival – a luxurious Filipino dessert made with layers of meringue, pistachio buttercream, and chopped pistachios, all harmoniously blended to create an irresistible treat. Perfect for celebrations, this dessert combines elegance and indulgence in every bite.

Ingredients

  • 6 large egg whites
  • 1 cup granulated sugar
  • 1/4 tsp cream of tartar
  • 1/2 tsp vanilla extract
  • 1/2 cup pistachio paste
  • 1 1/2 cups unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 1/2 cup chopped pistachios (for garnish and filling)
  • 1/2 cup heavy cream (optional for the buttercream)

Instructions

  • Prepare the Meringue:
    Preheat the oven to 250°F (120°C). Line two baking sheets with parchment paper.
    In a clean mixing bowl, beat the egg whites with cream of tartar until soft peaks form. Gradually add granulated sugar and continue beating until stiff peaks form.
    Add vanilla extract and mix gently.
    Spoon the meringue into a piping bag and pipe circles (about 8 inches in diameter) onto the baking sheets.
    Bake for 1.5 to 2 hours, or until meringues are dry and crisp. Let them cool completely.
  • Prepare the Pistachio Buttercream:
    In a large bowl, beat the softened butter until creamy.
    Gradually add powdered sugar and pistachio paste, continuing to beat until smooth.
    (Optional: For a richer buttercream, add 1/2 cup of whipped heavy cream to the mixture.)
  • Assemble the Sans Rival:
    Lay one meringue circle on a serving plate. Spread a generous layer of pistachio buttercream on top.
    Sprinkle some chopped pistachios on top of the buttercream.
    Repeat with the remaining meringue layers, buttercream, and pistachios, finishing with a layer of buttercream and a final sprinkle of pistachios on top.
  • Chill and Serve:
    Refrigerate the Pistachio Sans Rival for at least 2 hours to allow the flavors to meld. Slice and serve chilled.
