These Pizza Enchiladas are a fun and tasty twist on traditional enchiladas, combining the flavors of pizza and Mexican cuisine in a cheesy, meaty bake that’s perfect for weeknight dinners.

Ingredients

  • 1 pound ground beef
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 (15-ounce) can pizza sauce
  • 8 flour tortillas
  • 2 cups shredded mozzarella cheese
  • 1/2 cup mini pepperoni
  • 1/4 cup sliced black olives (optional)
  • 1/4 cup diced green bell pepper (optional)
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, cook the ground beef until browned. Drain any excess grease.
  3. Season the beef with garlic powder, onion powder, Italian seasoning, salt, and pepper. Stir to combine.
  4. Add half of the pizza sauce to the beef mixture and stir until heated through. Remove from heat.
  5. Spoon a portion of the beef mixture onto each flour tortilla and sprinkle with a bit of mozzarella cheese.
  6. Roll up the tortillas and place them seam side down in a greased 9×13-inch baking dish.
  7. Pour the remaining pizza sauce over the top of the enchiladas.
  8. Top with the remaining mozzarella cheese, mini pepperoni, black olives, green bell pepper, and Parmesan cheese.
  9. Bake uncovered for 20-25 minutes, or until the cheese is melted and bubbly.
  10. Let cool slightly before serving.

Notes

  • You can substitute ground turkey or chicken for a lighter version.
  • Customize toppings with your favorite pizza ingredients like mushrooms or jalapeños.
  • Serve with a side salad for a complete meal.
