Ingredients

  • 1 Scotch bonnet pepper, finely chopped (adjust to taste)

  • 1 teaspoon ground thyme

  • 1 teaspoon ground paprika

  • 1 teaspoon allspice (pimento)

  • 1/2 teaspoon ground cumin

  • 1 teaspoon ginger, grated

  • Salt and pepper to taste

  • 2 tablespoons parsley, chopped (for garnish)

Instructions

  1. Prepare the Marinade: In a bowl, combine lime juice, lemon juice, white vinegar, olive oil, minced garlic, chopped onion, Scotch bonnet pepper, thyme, paprika, allspice, cumin, grated ginger, salt, and pepper.

  2. Marinate the Chicken: Add the chicken to a resealable bag or shallow dish. Pour the marinade over the chicken, making sure each piece is evenly coated. Seal the bag or cover the dish, and refrigerate for at least 2 hours (overnight for more flavor).

  3. Cook the Chicken:
