Indulge in a Puff Pastry Strawberry Cheesecake, combining the flakiness of puff pastry with a creamy, rich cheesecake filling and the sweetness of fresh strawberries. Perfect for a special treat or dessert, this recipe is easy to make and will delight your taste buds!

Ingredients

  • 1 sheet of puff pastry (store-bought or homemade)
  • 8 oz cream cheese (softened)
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1/2 cup heavy cream
  • 1 cup fresh strawberries, sliced
  • 1 tbsp sugar (for strawberries)
  • 1 egg (for egg wash)

Instructions

  • Preheat the Oven: Preheat your oven to 375°F (190°C).
  • Prepare the Puff Pastry: Roll out the puff pastry sheet on a floured surface. Cut it into squares or rectangles based on your preference.
  • Make the Cheesecake Filling: In a bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth. Add the heavy cream and continue to beat until the mixture is fluffy and well-combined.
  • Assemble the Pastry: Place a spoonful of the cheesecake mixture in the center of each puff pastry square. Fold the edges to create a little envelope or just leave the pastry open, depending on the style you prefer.
  • Strawberry Topping: Sprinkle the sliced strawberries with a little sugar and let them sit for 10 minutes to release their juices. Top each puff pastry with the sugared strawberries.
  • Egg Wash: Brush the edges of the puff pastry with the egg wash (beat the egg and mix with a splash of water).
  • Bake: Place the puff pastries on a baking sheet and bake in the preheated oven for 18-20 minutes, or until golden brown.
  • Serve: Allow to cool slightly before serving. You can garnish with additional whipped cream or mint if desired.

Notes

  • If you prefer a more tart cheesecake filling, reduce the powdered sugar.
  • You can swap the strawberries for other fresh berries like raspberries or blueberries.
  • Make sure the puff pastry is well-chilled before baking for the best results.
