These quick chickpea truffles are a nutritious, no-bake snack packed with natural sweetness and protein. Perfect for a healthy treat or energy boost throughout the day.

Ingredients

  • 1 cup canned chickpeas, drained and rinsed
  • 1/2 cup nut butter (peanut or almond)
  • 1/4 cup maple syrup or honey
  • 1/2 cup oats
  • 1/4 cup cocoa powder
  • 1 tsp vanilla extract
  • Pinch of salt
  • 2 tbsp chocolate chips (optional)

Instructions

  1. Add chickpeas, nut butter, maple syrup, oats, cocoa powder, vanilla extract, and salt to a food processor.
  2. Blend until smooth and well combined, scraping down the sides as needed.
  3. Stir in chocolate chips if using.
  4. Scoop small portions of the mixture and roll into bite-sized balls.
  5. Place truffles on a lined tray and refrigerate for at least 20 minutes to firm up.
  6. Serve chilled or store for later.
