A vibrant and creamy chia pudding parfait layered with fresh fruits and optional granola for added crunch. This no-cook treat is naturally sweetened and perfect for breakfast or a healthy dessert.

Ingredients

  • 1/2 cup chia seeds
  • 2 cups full-fat coconut milk
  • 1/4 cup maple syrup
  • 2 tsp pure vanilla extract
  • 1 cup mixed fresh fruits (strawberries, blueberries, mangoes)
  • 1/2 cup granola (optional)

Instructions

  1. In a medium bowl, whisk together chia seeds, coconut milk, maple syrup, and vanilla extract. Let sit for 10 minutes until the mixture thickens.
  2. While the chia mixture sets, chop the mixed fruits into bite-sized pieces.
  3. In serving glasses or jars, layer the chia pudding and chopped fruits alternately until filled.
  4. If desired, add granola between layers for extra crunch.
  5. Chill the parfaits in the refrigerator for at least one hour before serving.

Notes

  • For a lighter version, use light coconut milk.
  • You can substitute maple syrup with honey or agave syrup.
