2 cups full-fat coconut milk
1/4 cup maple syrup
2 tsp pure vanilla extract
1 cup mixed fresh fruits (strawberries, blueberries, mangoes)

Instructions
In a medium bowl, whisk together chia seeds, coconut milk, maple syrup, and vanilla extract. Let sit for 10 minutes until the mixture thickens.
While the chia mixture sets, chop the mixed fruits into bite-sized pieces.
In serving glasses or jars, layer the chia pudding and chopped fruits alternately until filled.
