These Raspberry Cream Cheese Bites are the perfect blend of creamy, tangy cream cheese and sweet, tart raspberries, all wrapped up in a flaky, golden pastry. Easy to make and irresistible, these bite-sized treats are perfect for parties, dessert trays, or a sweet snack. Ingredients

  • 1 sheet puff pastry (thawed if frozen)
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup fresh raspberries (or raspberry preserves)
  • 1 egg (for egg wash)
  • 1 tbsp milk (for egg wash)
  • Optional: extra powdered sugar for dusting

Instructions

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • Roll out the puff pastry sheet on a lightly floured surface. Cut it into 9 equal squares or rectangles, depending on your desired size for each bite.
  • In a medium bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  • Place a small dollop (about 1 tablespoon) of the cream cheese mixture in the center of each pastry square.
  • Add a few fresh raspberries on top of the cream cheese mixture. If using raspberry preserves, spoon a small amount on top of the cream cheese mixture instead.
  • Fold the corners of each pastry square toward the center, creating a pouch or bite-sized pocket. Pinch the edges gently to seal them.
  • In a small bowl, whisk together the egg and milk to make the egg wash. Brush the top of each pastry bite with the egg wash for a golden, shiny finish.
  • Bake in the preheated oven for 15-20 minutes, or until the puff pastry is golden brown and puffed up.
  • Let the Raspberry Cream Cheese Bites cool for a few minutes before serving. Optionally, dust with powdered sugar for an extra touch of sweetness.

  • If you prefer a sweeter option, you can drizzle the bites with a bit of honey or chocolate syrup after baking.
