A decadent and visually stunning Red Velvet Strawberry Cheesecake that combines layers of moist red velvet cake with rich, creamy strawberry cheesecake. Perfect for special occasions and celebrations.

Ingredients

  • 2 cups all-purpose flour
  • 1½ cups granulated sugar
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cocoa powder
  • 1½ cups vegetable oil
  • 1 cup buttermilk, room temperature
  • 2 large eggs, room temperature
  • 2 tbsp red food coloring
  • 1 tsp vanilla extract
  • 1 tsp white distilled vinegar
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar (for cheesecake)
  • 2 large eggs (for cheesecake)
  • 1 tsp vanilla extract (for cheesecake)
  • 1 cup strawberry puree
  • Whipped cream, for garnish
  • Fresh strawberries, for garnish

Instructions

  1. Preheat oven to 325°F (163°C). Grease and line two 9-inch round cake pans.
  2. In a bowl, whisk together flour, sugar, baking soda, salt, and cocoa powder.
  3. In another large bowl, mix oil, buttermilk, eggs, red food coloring, vanilla, and vinegar until combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Divide the batter evenly between the two pans and bake for 30 minutes or until a toothpick comes out clean. Let cakes cool completely.
  6. For the cheesecake layer, beat the cream cheese and sugar until smooth.
  7. Add eggs one at a time, mixing well after each addition. Stir in vanilla and strawberry puree.
  8. Pour cheesecake mixture into a greased 9-inch springform pan. Bake at 325°F (163°C) for 45-50 minutes or until center is set.
  9. Let cheesecake cool completely, then chill in the refrigerator for at least 4 hours or overnight.
  10. To assemble, place one red velvet cake layer on a serving plate. Top with the cheesecake layer, then the second red velvet cake layer.
  11. Frost with whipped cream and garnish with fresh strawberries.
