Ingredients

  • 1 cup creamy peanut butter
  • 1/4 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 2 cups powdered sugar
  • 2 cups Rice Krispies cereal
  • 12 oz semi-sweet chocolate (chips or melting wafers)
  • 1 tbsp shortening or coconut oil (optional, for smoother melting)

Instructions

  • Mix base: In a large bowl, combine peanut butter, melted butter, and vanilla until smooth.
  • Add dry ingredients: Stir in powdered sugar, then fold in Rice Krispies until fully coated.
  • Shape: Roll mixture into 1-inch balls and place on a parchment-lined tray. Chill for 20–30 minutes.
  • Melt chocolate: In a microwave-safe bowl, melt chocolate (and shortening if using) in 30-second intervals, stirring until smooth.
  • Dip: Use a fork or toothpick to dip each ball into melted chocolate, coating evenly. Place back on tray.
  • Set: Refrigerate until chocolate hardens (about 30 minutes).
  • Serve chilled or at room temperature!
