These Roasted Maple Rosemary Carrots are a simple yet elegant side dish, combining the natural sweetness of carrots with maple syrup and the aromatic flavor of fresh rosemary. Perfect for holiday dinners or everyday meals.

Ingredients

  • 500g carrots, peeled and sliced
  • 1½ tablespoons olive oil
  • 1 tablespoon maple syrup
  • 1½ teaspoons fresh rosemary, finely chopped (or ½ teaspoon dried rosemary)
  • Sea salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and slice the carrots diagonally into 1/2-inch thick pieces.
  3. In a large mixing bowl, combine olive oil, maple syrup, rosemary, salt, and pepper.
  4. Add the carrots to the bowl and toss well until evenly coated.
  5. Spread the carrots out in a single layer on a baking sheet.
  6. Roast in the oven for 30–35 minutes, turning halfway through, until tender and caramelized at the edges.
  7. Remove from oven and serve warm.
