Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup roasted red peppers, chopped
  • 1 cup fresh spinach, chopped
  • 1 cup shredded mozzarella cheese
  • 1/4 cup cream cheese (optional, for extra creaminess)
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)
  • 1/4 cup grated Parmesan cheese (optional for topping)

Instructions

  • Preheat your oven to 375°F (190°C).
  • Using a sharp knife, carefully cut a pocket into the side of each chicken breast, creating a space to stuff the filling.
  • In a bowl, combine the chopped roasted red peppers, spinach, mozzarella, cream cheese (if using), minced garlic, oregano, salt, and pepper. Mix until well combined.
  • Stuff each chicken breast with the mixture, securing it with toothpicks if necessary.
  • Heat olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the stuffed chicken breasts and sear for 3-4 minutes on each side, until golden brown.
  • Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
  • Remove from the oven, let rest for a few minutes, then garnish with fresh parsley and Parmesan cheese, if desired.
