These Roasted Spicy Seasoned Pumpkin Seeds are crispy, flavorful, and make the perfect healthy snack. Made with simple pantry spices, they’re a delicious way to use leftover pumpkin seeds after carving.

Ingredients

  • 1 cup raw pumpkin seeds
  • 1 tablespoon olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper

Instructions

  1. Preheat your oven to 350ºF.
  2. Rinse the pumpkin seeds in a colander to remove all the pumpkin flesh and strings.
  3. Spread the seeds out on a towel and pat them dry thoroughly.
  4. In a bowl, toss the seeds with olive oil and all the spices until evenly coated.
  5. Spread the seeds in a single layer on a rimmed baking sheet lined with parchment paper.
  6. Roast in the oven for 25-30 minutes, stirring halfway through, until golden and crispy.
  7. Let them cool before eating. Store in an airtight container.

Notes

  • You can adjust the spice level by reducing or increasing the cayenne pepper.
  • Great as a snack or salad topping.
  • Make sure the seeds are completely dry before roasting for maximum crispiness.
