This Roasted Sweet Potato with Honey and Feta recipe combines caramelized roasted sweet potatoes, tangy feta cheese, and a drizzle of honey for a perfect sweet and savory side dish or appetizer.

Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 2 tbsp olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 cup crumbled feta cheese
  • 12 tbsp honey (to taste)
  • Fresh parsley or cilantro, chopped (optional for garnish)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Peel and cube the sweet potatoes into evenly sized pieces.
  3. In a large bowl, toss the sweet potatoes with olive oil, salt, pepper, paprika, and garlic powder.
  4. Spread the seasoned sweet potatoes evenly on the prepared baking sheet.
  5. Roast for 30–35 minutes, flipping halfway through, until tender and lightly caramelized.
  6. Remove from oven and transfer to a serving dish.
  7. Drizzle with honey and sprinkle crumbled feta on top.
  8. Garnish with fresh parsley or cilantro if desired. Serve warm.
