Salmon Crispy Rice is a mouthwatering appetizer featuring golden, crispy sushi rice topped with a spicy salmon mixture and garnished with avocado and jalapeño. Perfect for parties or sushi night at home!

Ingredients

  • 2 cups sushi rice, cooked
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 tsp salt
  • 8 oz sushi-grade salmon, finely chopped
  • 2 tbsp mayonnaise (preferably Kewpie)
  • 1 tbsp sriracha
  • 1 tsp soy sauce
  • 1 tsp sesame oil
  • Vegetable oil for frying
  • 1 avocado, sliced
  • Jalapeño slices (optional)
  • Chives or green onions, finely chopped (for garnish)
  • Soy sauce for serving (optional)

Instructions

  1. Mix rice vinegar, sugar, and salt, and stir into the warm sushi rice. Let it cool completely.
  2. Spread the rice into a parchment-lined baking dish, press it flat to about 1-inch thickness, and refrigerate for at least 1 hour or until firm.
  3. In a bowl, combine chopped salmon, mayonnaise, sriracha, soy sauce, and sesame oil. Mix well and refrigerate until ready to use.
  4. Remove chilled rice and cut into small rectangles.
  5. Heat vegetable oil in a pan over medium-high heat. Fry rice pieces until golden and crispy on both sides. Drain on paper towels.
  6. Top each crispy rice piece with a spoonful of the spicy salmon mixture.
  7. Garnish with avocado slices, jalapeño (if using), and chopped chives or green onions.
  8. Serve immediately with soy sauce if desired.

Notes

  • Make sure the rice is fully cooled and firm before frying to hold its shape.
  • You can use canned salmon or cooked salmon as a substitute, though texture and flavor may vary.
  • Kewpie mayo is preferred for authentic flavor but regular mayo works in a pinch.
  • Adjust sriracha to control spice level.
