Ingredients
250 g salmon fillets (2 fillets)
4 tbsp teriyaki sauce
2 tbsp sesame oil
200 g broccoli, chopped
200 g rice noodles
Sesame seeds (optional for serving)
Parsley (optional for serving)
Instructions
Baste the salmon fillets with 1 tablespoon of teriyaki sauce.
Cook the salmon using one of the following methods: air fry at 205°C for 8 minutes, bake at 200°C for 15 minutes, or pan fry for 10 minutes until fully cooked.
Meanwhile, cook the rice noodles according to the package instructions, then drain.
Heat 1 tablespoon of sesame oil in a frying pan and sauté the chopped broccoli for a few minutes until slightly tender.
Add the drained noodles, remaining 1 tablespoon sesame oil, and 3 tablespoons teriyaki sauce to the pan. Stir well to combine and heat through.
Serve the noodles in bowls and top with the cooked salmon. Garnish with sesame seeds and parsley if desired.
Notes
You can substitute broccoli with other vegetables like snap peas or bell peppers.
For extra flavor, add a splash of soy sauce or chili flakes.
Use whole wheat or soba noodles as an alternative to rice noodles.
