Ingredients
1 cup Greek yogurt
6–8 Medjool dates, pitted and chopped
2 tbsp peanut butter
2 tbsp maple syrup
1/2 tsp vanilla extract
1/4 tsp sea salt
1 cup dark chocolate chips
1 tsp coconut oil
Instructions
Line a baking sheet with parchment paper.
In a bowl, mix Greek yogurt, chopped dates, peanut butter, maple syrup, vanilla extract, and sea salt until well combined.
Scoop small portions of the mixture onto the prepared baking sheet to form clusters.
Place the tray in the freezer for 1–2 hours, or until the clusters are firm.
In a microwave-safe bowl, melt the dark chocolate chips with coconut oil in 20–30 second intervals, stirring until smooth.
Dip or drizzle the frozen yogurt clusters with the melted chocolate.
Return the clusters to the freezer for another 10–15 minutes until the chocolate is set.
Serve directly from the freezer and enjoy.
Notes
Store clusters in an airtight container in the freezer for up to 2 weeks.
Use almond butter or sunflower seed butter as a substitute for peanut butter.
Add chopped nuts or granola for extra crunch.
Adjust salt to taste for a stronger salted caramel flavor.
