Ingredients

  • 1 sheet puff pastry (store-bought or homemade)
  • 2 cups cooked chicken, shredded
  • 1 cup mushrooms, finely chopped
  • ½ cup onion, finely chopped
  • 2 cloves garlic, minced
  • ½ cup heavy cream
  • ¼ cup chicken broth
  • ½ cup grated cheese (cheddar or Gruyère)
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • 1 egg (for egg wash)

Instructions

  • Prepare the Filling:
  • Heat olive oil in a skillet over medium heat.
  • Sauté onions and garlic until translucent.
  • Add mushrooms and cook until tender and moisture evaporates.
  • Stir in shredded chicken, thyme, salt, and pepper.
  • Pour in chicken broth and heavy cream; simmer until thickened.
  • Remove from heat and cool slightly.
  • Assemble the Pastry:
  • Preheat oven to 375°F (190°C).
  • Roll out puff pastry on a floured surface.
  • Cut into squares or rectangles as preferred.
  • Spoon chicken and mushroom filling into center of each piece.
  • Sprinkle grated cheese over filling.
  • Fold pastry to enclose filling and seal edges by pressing together.
  • Place on parchment-lined baking sheet.
  • Brush tops with beaten egg for a golden finish.
  • Bake:
  • Bake 20–25 minutes or until puffed and golden brown.
  • Cool slightly before serving.

Notes

  • For vegetarian option, substitute chicken with sautéed spinach or mixed vegetables.
  • Make sure filling is cooled before assembling to avoid soggy pastry.
  • Pastries can be frozen before baking; bake from frozen, adding extra minutes to baking time.
