Ingredients
12 yufka triangles (or phyllo dough sheets cut into triangles)
1 cup feta cheese, crumbled
1 cup mozzarella cheese, shredded
1 tablespoon chopped parsley (optional)
1 egg white (for sealing)
Vegetable oil, for frying
Instructions
In a bowl, mix together the feta cheese, mozzarella cheese, and parsley if using.
Lay one yufka triangle on a flat surface with the pointed end facing away from you.
Place about 1 tablespoon of the cheese mixture near the base of the triangle.
Fold the sides over the filling and roll tightly towards the tip to form a cigar shape.
Brush the tip with egg white to seal the roll.
Repeat with remaining yufka and filling.
Heat vegetable oil in a deep skillet over medium heat.
Fry the rolls in batches until golden brown and crispy, about 2–3 minutes per side.
Remove and drain on paper towels.
Serve warm with your favorite dipping sauce.
Notes
You can substitute yufka with phyllo dough if needed, but handle carefully to prevent tearing.
Make ahead and freeze the uncooked rolls; fry directly from frozen when ready to serve.
