This Skillet Apple Cider Chicken is a cozy, flavorful fall-inspired dish featuring juicy chicken breasts simmered in a savory-sweet apple cider sauce with apples, onions, and fresh herbs.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • Salt and black pepper, to taste
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 apples, thinly sliced (such as Honeycrisp or Gala)
  • 1 cup apple cider
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 1 tablespoon chopped fresh rosemary (or 1 teaspoon dried rosemary)
  • 1 tablespoon apple cider vinegar
  • 1/2 cup chicken broth
  • 1 teaspoon cornstarch mixed with 1 tablespoon water (optional, for thickening)

Instructions

  1. Season the chicken breasts with salt and black pepper on both sides.
  2. Heat olive oil and butter in a large skillet over medium-high heat.
  3. Add the chicken breasts and sear until golden brown on both sides, about 4-5 minutes per side. Remove and set aside.
  4. In the same skillet, add sliced onions and sauté for 2-3 minutes until softened.
  5. Add garlic and sliced apples, and cook for another 2-3 minutes until fragrant and slightly tender.
  6. Pour in the apple cider, chicken broth, apple cider vinegar, and stir in Dijon mustard, thyme, and rosemary. Bring to a simmer.
  7. Return the chicken to the skillet and reduce heat to medium-low. Cover and simmer for 10-15 minutes, or until chicken is fully cooked through.
  8. If desired, stir in the cornstarch slurry and simmer for 2-3 more minutes to thicken the sauce.
  9. Serve the chicken with apples and onions spooned over the top, along with the sauce.
