This Slow Cooker Cajun Potato Soup is a creamy, spicy, and comforting dish made with potatoes, Cajun seasoning, and vegetables, all simmered to perfection in a crockpot. It’s an easy, hearty meal perfect for cold days.

Ingredients

  • 5 cups potatoes, peeled and diced
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 teaspoon minced garlic
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt (or to taste)
  • 4 cups chicken broth
  • 1 (8 oz) block cream cheese, cubed and softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup heavy cream
  • Optional toppings: chopped green onions, bacon bits, extra shredded cheese

Instructions

  1. Add potatoes, onion, bell peppers, garlic, Cajun seasoning, paprika, black pepper, salt, and chicken broth to the slow cooker.
  2. Stir to combine.
  3. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the potatoes are tender.
  4. Using an immersion blender, blend the soup partially to your desired consistency, leaving some chunks if desired. (Or transfer part to a blender and return to slow cooker.)
  5. Add cream cheese and stir until melted and combined.
  6. Add cheddar cheese and heavy cream. Stir until melted and smooth.
  7. Taste and adjust seasoning as needed.
  8. Serve hot with optional toppings like green onions, bacon bits, or extra cheese.

Notes

  • You can make this soup vegetarian by using vegetable broth instead of chicken broth and omitting bacon toppings.
  • For a spicier soup, add more Cajun seasoning or a dash of hot sauce.
  • Soup can be stored in the refrigerator for up to 3 days and reheated on the stovetop.
