Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)
  • 4 medium potatoes, peeled and diced
  • 3 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup frozen peas
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper, to taste
  • 2 tablespoons flour (optional for thickening)
  • Fresh parsley for garnish

Instructions

  • Place the chicken breasts at the bottom of the slow cooker.
  • Add the diced potatoes, carrots, celery, onion, and garlic on top of the chicken.
  • Pour in the chicken broth and sprinkle the thyme, rosemary, salt, and pepper over the ingredients. Add the bay leaf.
  • Cover the slow cooker and cook on low for 6-8 hours, or until the chicken is tender and vegetables are fully cooked.
  • About 30 minutes before serving, shred the chicken with two forks and stir in the frozen peas. If you want a thicker stew, whisk 2 tablespoons of flour into a bit of water to create a slurry, then stir it into the stew and let it cook for the remaining time.
  • Taste and adjust seasonings as needed.
  • Garnish with fresh parsley before serving.
