Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tbsp rice vinegar
  • 2 tbsp sesame oil
  • 2 garlic cloves, minced
  • 1 tbsp freshly grated ginger
  • 1/2 tsp red pepper flakes (optional for heat)
  • 1/2 cup chicken broth
  • 2 tbsp chopped peanuts (for garnish)
  • 2 tbsp chopped green onions (for garnish)
  • Cooked rice or noodles (for serving)

Instructions

  • Prep the Chicken: Place the chicken breasts in the bottom of the slow cooker.
  • Make the Peanut Sauce: In a bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, sesame oil, garlic, ginger, red pepper flakes (if using), and chicken broth until smooth.
  • Slow Cook: Pour the peanut sauce over the chicken in the slow cooker. Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is fully cooked and tender.
  • Shred the Chicken: Once cooked, remove the chicken from the slow cooker and shred it with two forks. Return the shredded chicken to the slow cooker and stir to combine with the sauce.
  • Serve: Serve the peanut chicken over cooked rice or noodles. Garnish with chopped peanuts and green onions.

Notes

  • Adjust the spice level by adding more or less red pepper flakes.
  • This dish also works great with boneless, skinless thighs for added juiciness.
  • For a lighter version, use low-sodium soy sauce and reduce the amount of honey.
