Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Prep the Chicken: Season the chicken breasts with salt, pepper, thyme, and oregano on both sides.
  • Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for about 5-6 minutes per side, or until golden brown and fully cooked through. Remove the chicken from the skillet and set aside.
  • Prepare the Creamy Sauce: In the same skillet, add the chopped onion and sauté for 2-3 minutes until soft. Add minced garlic and cook for another 30 seconds until fragrant.
  • Deglaze the Pan: Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet.
  • Make it Creamy: Lower the heat and add the heavy cream. Stir in the Parmesan cheese, allowing the sauce to thicken slightly. Season with salt and pepper to taste.
  • Combine Chicken and Sauce: Return the cooked chicken to the skillet, spooning the sauce over the chicken. Let it simmer for 2-3 minutes to heat the chicken through and allow the flavors to meld.
  • Garnish and Serve: Sprinkle with freshly chopped parsley and serve hot.

Notes

  • You can swap the heavy cream with half-and-half for a lighter version.
  • For added flavor, you can include mushrooms or spinach in the sauce.
  • Serve with rice, mashed potatoes, or a green vegetable for a complete meal.
