These M&M Cookie Bars are thick, chewy, and packed with chocolate chips and colorful M&M candies. A one-bowl recipe that’s quick to throw together, these bars are perfect for parties, holidays, or just satisfying your cookie cravings with minimal effort.

Ingredients

  • 3/4 cup (170g) unsalted butter, melted & slightly cooled
  • 1 cup (200g) packed light or dark brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1 large egg + 1 large egg yolk
  • 2 teaspoons pure vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 teaspoon cornstarch
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (180g) semi-sweet chocolate chips
  • 1 cup (200g) M&M’s (plus extra for topping, optional)

Instructions

  1. Preheat oven to 350°F (177°C). Line a 9×13-inch baking pan with parchment paper or lightly grease it.
  2. In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth.
  3. Add the egg, egg yolk, and vanilla extract, and whisk until combined.
  4. Add the flour, cornstarch, baking soda, and salt. Stir with a spatula or wooden spoon until just combined.
  5. Fold in the chocolate chips and M&M’s.
  6. Spread the dough evenly into the prepared pan. Press extra M&M’s on top if desired.
  7. Bake for 30–35 minutes, or until the edges are lightly browned and the center is set.
  8. Allow to cool completely in the pan on a wire rack before cutting into bars.

Notes

  • Don’t overbake — bars will continue to set as they cool.
  • You can customize with peanut butter M&Ms, mini M&Ms, or holiday-themed colors.
  • For easier slicing, chill bars briefly after cooling.
  • Store in an airtight container at room temperature for up to 1 week.
