This stuffed pepper recipe is packed with savory marinara sauce, seasoned ground beef, and cheesy pasta, making it a perfect weeknight dinner for the whole family.

Ingredients

  • 4 large bell peppers (any color)
  • 6 oz spaghetti, cooked and drained
  • 1/2 lb ground beef (or Italian sausage)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 1/2 cups marinara sauce
  • 1/2 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp olive oil
  • Fresh basil or parsley for garnish (optional)

Instructions

  • Prepare the Bell Peppers: Preheat the oven to 375°F (190°C). Slice the tops off the bell peppers and remove the seeds and membranes. Lightly brush with olive oil and place them in a baking dish.
  • Cook the Meat: In a skillet over medium heat, cook the ground beef until browned. Add the diced onion and garlic, cooking until fragrant. Drain any excess grease.
  • Make the Spaghetti Mixture: Stir in the marinara sauce, Italian seasoning, salt, and black pepper. Add the cooked spaghetti and toss to coat evenly.
  • Stuff the Peppers: Divide the spaghetti mixture evenly among the bell peppers. Sprinkle mozzarella and Parmesan cheese on top.
  • Bake: Cover with foil and bake for 25 minutes. Remove the foil and bake for another 10 minutes until the cheese is melted and bubbly.
  • Serve: Garnish with fresh basil or parsley and serve hot.
