Spam Fried Rice with Mixed Veggies is a quick and satisfying dish packed with savory flavors, tender vegetables, and fluffy rice. Perfect for busy weeknights or using up leftover rice.

Ingredients

  • 3 cups cooked rice
  • 1 can Spam, diced
  • 2 cups mixed vegetables
  • 2 eggs
  • 3 cloves garlic, minced
  • 1 small onion, chopped
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 2 tablespoons cooking oil
  • 2 green onions, sliced
  • 1/2 teaspoon black pepper

Instructions

  1. Heat cooking oil in a large skillet or wok over medium-high heat. Add diced Spam and cook until browned and crisp. Remove and set aside.
  2. In the same pan, sauté chopped onion and minced garlic until fragrant and softened.
  3. Add mixed vegetables and stir-fry until heated through.
  4. Push vegetables to one side, crack in the eggs, and scramble until just cooked. Mix with the vegetables.
  5. Add cooked rice, breaking up clumps, and stir well.
  6. Return Spam to the pan and toss everything together.
  7. Add soy sauce, oyster sauce, and sesame oil. Stir until evenly coated and heated through.
  8. Finish with sliced green onions and black pepper. Serve hot.
