Ingredients
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
3/4 cup buttermilk
1/4 cup molasses
8 ounces cream cheese, softened
1/2 cup unsalted butter, softened (for frosting)
3 cups powdered sugar
1 teaspoon vanilla extract (for frosting)
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or two 9-inch round cake pans.
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, cloves, and nutmeg. Set aside.
In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy.
Beat in the eggs, one at a time, until well incorporated. Stir in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
Stir in the molasses until evenly distributed throughout the batter.
Pour the batter into the prepared baking pan(s) and spread it out evenly.
Bake for 25–30 minutes (9×13-inch pan) or 30–35 minutes (round pans), or until a toothpick inserted into the center comes out clean.
Remove the cake from the oven and allow it to cool completely in the pan(s) on a wire rack.
To make the frosting, beat the softened cream cheese and butter together until smooth and creamy.
Gradually add the powdered sugar, one cup at a time, beating well after each addition.
Stir in the vanilla extract until the frosting is smooth and creamy.
Once the cake is completely cool, spread the cream cheese frosting evenly over the top.
Slice and serve.
Notes
Make sure the cake is completely cool before frosting to prevent melting.
You can add chopped nuts or raisins to the batter for added texture.
This cake pairs well with a warm cup of tea or coffee.
Store leftovers covered in the refrigerator for up to 5 days.
