Ingredients
600 mL milk (2 ½ cups, lukewarm)
1 tbsp honey
7 g active dry yeast (2 ½ tsp)
250 g flour (about 2 cups)
90 g cornstarch (about ⅔ cup)
2 tsp ground cinnamon
½ tsp ground cardamom
¼ tsp ground cloves
115 g unsalted butter (melted, ½ cup)
1 ¼ tsp sea salt
2 large eggs
½ tsp baking soda
2 tsp water (room temperature)
Pecans (for toasting and topping)
1 recipe caramel apple compote
Whipped cream (optional)
Maple syrup (optional)
Whipped butter (optional)
Instructions
Place lukewarm milk in a bowl and whisk in honey until dissolved. Sprinkle yeast over the milk, mix gently, and let activate for 10–15 minutes.
In a large bowl, combine the activated yeast mixture with flour, cornstarch, spices, melted butter, and salt. Whisk until smooth with no lumps.
Cover and refrigerate overnight or up to 24 hours to allow the batter to rise.
Toast pecans in a skillet over medium heat until fragrant, then cool and chop. Set aside.
In the morning, mix water and baking soda in a bowl. Add eggs and whisk well.
Mix ½–¾ cup of waffle batter into the egg mixture, then fold this mixture back into the main batter gently without deflating.
Preheat waffle iron and lightly grease with butter or oil.
Pour batter onto the waffle iron, sprinkle chopped pecans on top, and cook until crisp and golden brown.
Remove waffles and cool on a wire rack. Keep warm in a low oven if needed.
Warm the caramel apple compote and spoon over waffles before serving. Add whipped cream, maple syrup, or whipped butter if desired.
Notes
For best flavor and texture, allow the batter to ferment overnight.
Do not overmix the batter after fermentation to keep waffles light and airy.
Pecans can be substituted with walnuts or omitted if preferred.
Keep cooked waffles crisp by placing them on a wire rack instead of stacking.
