Ingredients

  • 2 boneless, skinless chicken breasts, diced
  • 2 tbsp Cajun seasoning
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • 1/4 cup unsalted butter
  • 2 garlic cloves, minced
  • 2 tbsp honey
  • 1/2 cup heavy cream
  • 8 oz fettuccine (or pasta of choice)
  • Reserved pasta water (as needed)
  • Chopped green onions or parsley for garnish

Instructions

  1. Cook the Pasta:
    Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Drain and reserve 1/2 cup of pasta water.
  2. Prepare the Chicken:
    Season diced chicken with Cajun seasoning, salt, and pepper.
  3. Sear the Chicken:
    In a large skillet, heat olive oil over medium-high heat. Add seasoned chicken and cook until golden and cooked through, about 6–8 minutes. Remove chicken from skillet and set aside.
  4. Make the Sauce:
    In the same skillet, melt butter over medium heat. Add minced garlic and cook until fragrant, about 30 seconds. Stir in honey and let simmer for 1 minute. Add heavy cream and stir until smooth. Let the sauce simmer for 2–3 minutes until slightly thickened.
  5. Combine Chicken and Pasta:
    Return the cooked chicken to the skillet and toss to coat in the sauce. Add drained pasta to the skillet and toss gently to combine. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
  6. Serve:
    Garnish with chopped green onions or parsley. Serve hot and enjoy!
