Ingredients

  • 1 medium fresh pineapple, peeled, cored, and diced
  • 23 fresh jalapeños, seeded and minced
  • 1 small red onion, finely chopped
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1 tablespoon lime juice (for extra tanginess)

Instructions

  • Prepare the ingredients: Peel and dice the pineapple, mince the jalapeños, and chop the red onion.
  • Combine the ingredients: In a medium saucepan, combine the diced pineapple, minced jalapeños, chopped onion, apple cider vinegar, brown sugar, ground ginger, ground cumin, salt, and black pepper.
  • Cook the chutney: Bring the mixture to a simmer over medium heat. Cook for about 15-20 minutes, stirring occasionally, until the pineapple is soft and the chutney thickens slightly.
  • Adjust flavor: Taste and adjust seasoning. Add lime juice for extra tanginess if desired.
  • Cool and serve: Remove from heat, let it cool slightly, and transfer to a clean jar or container. Refrigerate until ready to use.

Notes

  • For a milder chutney, remove the seeds from the jalapeños or use fewer jalapeños.
  • Store in an airtight container in the fridge for up to 2 weeks.
  • The chutney can be frozen for up to 3 months. Thaw before using.
