A fresh and vibrant spinach and arugula salad tossed with a light vinaigrette, perfect as a healthy side or light meal.

Ingredients

  • 4 cups fresh spinach
  • 2 cups arugula
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup cucumber, sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup toasted walnuts
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Wash and dry the spinach and arugula thoroughly and place them in a large salad bowl.
  2. Add cherry tomatoes, red onion, cucumber, feta cheese, and toasted walnuts.
  3. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and black pepper until well combined.
  4. Drizzle the dressing over the salad just before serving.
  5. Toss gently to combine and serve immediately.

Notes

  • Substitute goat cheese for feta for a creamier flavor.
  • Add grilled chicken or chickpeas for extra protein.
  • Store dressing separately if making ahead to keep greens fresh.
