Ingredients

  • 4 salmon fillets
  • 2 cups fresh spinach
  • 1/2 cup cream cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Lemon wedges, for serving

Instructions

  • Preheat oven to 375°F (190°C).
  • Heat olive oil in a skillet over medium heat. Sauté garlic until fragrant.
  • Add spinach and cook until wilted. Let cool slightly.
  • In a bowl, mix cream cheese, Parmesan, salt, and pepper. Stir in the spinach mixture.
  • Slice a pocket into each salmon fillet and generously stuff with the spinach filling.
  • Place salmon on a parchment-lined baking sheet.
