Sticky Toffee Pudding is a beloved British dessert that combines a moist date cake with a rich toffee sauce, often served with vanilla ice cream or whipped cream. This indulgent treat is easy to make and perfect for any occasion, delivering both comfort and decadence in every bite.

Ingredients

  • For the Pudding: 1 cup pitted dates (chopped), 1 cup boiling water, 1 teaspoon baking soda, 1 cup all-purpose flour, 1 teaspoon baking powder, ¼ teaspoon salt, ½ teaspoon ground cinnamon, ½ cup unsalted butter, ¾ cup packed brown sugar, 2 large eggs, 1 teaspoon vanilla extract.
  • For the Toffee Sauce: ½ cup unsalted butter, 1 cup packed brown sugar, 1 cup heavy cream, 1 teaspoon vanilla extract.

Instructions

  • Soak chopped dates in boiling water with baking soda for 15-20 minutes.
  • Preheat oven to 350°F (175°C) and grease an 8-inch baking pan.
  • Mix dry ingredients in one bowl and cream butter and sugar in another.
  • Add eggs and vanilla to the butter-sugar mixture, then incorporate the soaked dates.
  • Add the dry ingredients and mix gently, then bake for 30-35 minutes.
  • For the sauce, melt butter and sugar, add cream, and stir until smooth.
  • Serve warm with the toffee sauce and optional ice cream or cream.
